Chicken Taco Soup

What’s up with the weather around here lately?  It’s almost June, and I am STILL wearing scarves and sweaters (don’t take this as a complaint…) Cold weather always makes me want warm food.  So, last night, I cooked up my rendition of taco soup.  It was so good, I had it again for lunch today!

Thought I’d share.  Here’s my recipe:

Chicken Taco Soup

1 1/2 lbs chicken
1/2 onion
1 packet chicken taco seasoning
1 (15oz) can whole kernel corn with liquid
1 (15oz) can pinto beans with liquid
1 (15oz) can black beans with liquid
1 (15oz) can diced tomatoes with green chilies
15 oz chicken broth

Combine chicken and onion in large skillet, brown.  Transfer to slow cooker.

Add taco seasoning, beans, corn, tomatoes, water, and broth.  Stir well. Cook on LOW for 3-4 hours.  Serve with tortilla chips.
