Home Made Granola, My Version

I love granola.  I know, that’s super stereotypical of me, born and raised in Washington State and all. But regardless of the fact, I think it’s wonderful.

As a food blogger follower, I’ve been noticing a ton of recipes popping up for the stuff. All looking delicious, all chalked full of oil and sugar.  Serious bummer.  After reading tons of recipes, I’ve created my own, with less sugar and oil . Super Yummy.

2 1/2 cups extra thick oats

1 cup trifoliate (It’s an oat, can be replaced with an additional cup of extra thick oats)

1/2 cup rye flakes

2/3 cup flax seeds

2/3 cup raw sunflower seeds

2/3 cup raw pumpkin seeds

1/2 cup wheat bran

1/3 cup raw sesame seeds

2/3 cup unsweetened coconut

1 1/2 cups raisins

1 cup dried cherries

5 TBS grape seed oil

4 TBS maple syrup

3 TBS honey

1/2 cup raw cocoa nibs

Preheat oven to 250.  Stir all ingredients (except cacao nibs) together in a bowl. Spread mixture
thinly on a baking sheet.  Place in oven and bake for 15 minutes. Toss granola, rotate pan and repeat; cooking in 15 minute increments until granola is dry and golden brown (about 1 hour). Cool.  Stir in Cacao Nibs.

Store in air-tight container.
