Peanut Butter Chocolate Chip Banana Bread

Last weekend I went to make banana bread, only to discover I didn’t have enough bananas to make a full batch.  So, instead of decreasing the recipe, I re-vamped it a bit.  I was a bit skeptical at first, but it turned out really yummy!

Here’s what I did:

Peanut Butter Chocolate Chip Banana Bread

1 cup sugar

1/2 cup butter, plus 1 tablespoon butter, softened

2 tablespoons peanut butter

2 large eggs

3 very ripe bananas

1/2 cup soured milk or buttermilk

1 teaspoon vanilla

2 1/2 cups all-purpose baking flour

3/4 cup semi-sweet chocolate chips

1 teaspoon baking soda

1 teaspoon salt

Tablespoon brown sugar

Heat over to 350 degrees. Grease 2 loaf pans, or 1 bundt.  

Heat 1 tablespoon of butter in skillet, add sliced bananas and caramelize over a low heat, rotating sides till browned.  Sprinkle with 1 tablespoon brown sugar and mash.  Set aside and let cool.

Mix sugar, butter, and peanut butter in a large bowl.   Stir in eggs until blended well. Stir in mashed bananas, buttermilk, and vanilla.  Beat until smooth.

Stir in flour, baking soda, salt and chocolate chips. 

Bake about 1 hour.

Remove bread from pans and let cool on a wire rack. Cool before slicing.
