Sometimes I just need chocolate. Tonight was one of those nights.
So, instead of climbing on the treadmill as planned, I fired up the KitchenAid, turned on the oven and went looking for the perfect cookie recipe. After stumbling across a Chocolate Chocolate Chip Cookie recipe, (and substituting a couple ingredients…) I think we are in business. Yum.
Chocolate Raspberry M&M Cookies
1 cup Butter
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups Dark Chocolate Raspberry M&Ms
1/4 cup cocoa nibs
Preheat oven to 350 degrees. In a large bowl, beat sugar, eggs, butter, and vanilla until light and fluffy. Combine flour, cocoa, baking soda, and salt. Stir till sell blended. Mix in M&Ms and cocoa nibs. Drop rounded spoonfuls onto greased cookie sheet.
Bake for 9-10 minutes until set. Cool on wire racks.
Makes about 4 dozen cookies.
